TEXTURE MEETS INNOVATION.
Single pot still combines malted and unmalted barley at one distillery and uses copper pot stills. Single grain is grain whiskey from one distillery, usually made continuously in column stills.
Single pot still whiskey carries grain weight, spice and an oily texture. Single grain is lighter from column distillation, leaving cask choice plenty of room to speak.

Unmalted barley is the key to the style’s strong grain character and spice.

What the wood adds: Bourbon and sherry casks build layers of toffee, dried fruit, nuts and baking spice.
The story behind it: The style took shape after Britain taxed malted barley in the 1800s. Irish distillers folded untaxed raw barley into the mash—and created a signature style in the process.

Single grain does not mean one grain. It means grain whiskey produced at one distillery; this bottle contains both corn and malted barley.

What the wood adds: Matured exclusively in California red-wine casks—an unusual choice that contributes berries, grape and a dry tannic finish.
The story behind it: Its lighter style is made possible by the continuous column still, patented by Irish inventor Aeneas Coffey in the 1830s.
Alternate Single Pot Still: Green Spot
Try this if Redbreast 12 is familiar. It is brighter and fresher; Redbreast is older, richer and more sherry-driven.

What the wood adds: Bourbon casks bring vanilla, honey and gentle oak, while sherry casks add dried fruit, toasted nuts and soft spice.
The story behind it: Dublin wine merchants Mitchell & Son marked aging barrels with colored paint. The green spot denoted their 10-year whiskey.
