Ireland’s whiskey landscape has changed dramatically in the past decade, and Boann Distillery in County Meath’s Boyne Valley stands at the center of that revival. Founded by Patrick and Marie Cooney and their family in 2019, Boann brings together generations of Irish drinks-industry experience and a genuine love for craft. Their goal is simple but ambitious: to restore Ireland’s whiskey heritage through precision, patience, and respect for the past.
Boann’s distillery design reflects that balance of science and art. Their copper pot stills are custom-built to encourage extra reflux, essentially refining the spirit multiple times for smoothness and purity. They use Irish barley, triple distillation, and a mix of traditional and modern casks. Everything is distilled, matured, and bottled on-site in the Boyne Valley, a region famous for ancient monasteries, scholars, and early craftsmanship. Why “The Whistler”
The name The Whistler was chosen to celebrate Ireland’s long tradition of song and storytelling. It represents the link between craft and culture. Just as a whistled tune carries a story without words, this whiskey carries the character of its makers and the land it comes from.
Boann describes it best: “The Whistler is a whiskey of a noteworthy craft that is as old as the story told, the written word, and the whistled tune.” The name captures the distillery’s belief that whiskey should have voice and melody, something memorable that lingers long after the last sip

Each expression in The Whistler lineup is triple-distilled and thoughtfully matured, showcasing Boann’s obsession with wood and flavor. From bourbon and sherry to Calvados and stout-seasoned casks, every finish adds a new layer to the story.
Double Oaked
Blend: 20% single malt, 80% grain
Maturation: Ex-bourbon barrels, then married in ex-sherry casks
ABV: 40%
This is the foundation of the range, approachable, rich, and balanced. The bourbon wood brings vanilla and caramel, while the sherry casks contribute dried fruit, spice, and a touch of nuttiness.
Tasting notes: Salted caramel, vanilla, oak spice, zesty citrus, and honey; a creamy palate with citrus and oak; a long finish with honeyed tannin.
Calvados Cask Finish
Blend: Triple-distilled malt and grain whiskey
Maturation: Ex-bourbon barrels, then finished in Calvados casks from Normandy
ABV: 43%
This bottling connects Ireland’s whiskey with Normandy’s apple-brandy tradition. The Calvados casks layer crisp orchard fruit over the sweet, soft Irish base.
Tasting notes: Nose of apple drops, citrus zest, toffee, banana, apricot, and melon; palate of sweet peach, pear, and bright citrus with vanilla; finish long and creamy with lingering pear and zest.
Imperial Stout Cask Finish
Blend: Irish malt and single grain whiskey
Maturation: Finished in casks previously holding Boann’s own Boyne Brewhouse Imperial Stout
ABV: 43%
This expression marries two Irish traditions—brewing and distilling. Once the whiskey casks are emptied, they’re filled with rich Imperial Stout from Boann’s brewery to season the wood. When the stout is removed, whiskey goes back in to finish.
Tasting notes: Dark berries, bitter coffee, and creamy cocoa on the nose; a palate of cocoa, caramel, and subtle coffee; long, creamy finish.
The Whistler Irish Honey
Base: Ex-bourbon matured Irish whiskey infused with honey from Boann’s own orchards
A smooth, sweet digestif that blends triple-distilled whiskey with natural honey.
Tasting notes: Natural orchard honey, creamy vanilla, caramel, and almond sweetness.
