Ireland has a long history of independent whiskey bonders. These were small producers who bought spirit, aged it, and bottled it under their own label. That tradition nearly vanished until Two Stacks arrived in 2020, determined to revive it with fresh energy and creativity.
Founded by friends Shane McCarthy, Liam Brogan, and Donal McLynn, Two Stacks grew out of their experience in the Irish spirits trade and their shared passion for whiskey. Their name and logo are a tribute to the twin chimney stacks of the Old Dundalk Distillery, once the largest distillery in Ireland and a landmark visible to sailors navigating the Irish Sea. These stacks were a beacon to ships, and Two Stacks aims to be the same for whiskey lovers, guiding them toward distinctive, authentic expressions. The simple twin brushstrokes in their logo reflect both the historic smokestacks and their commitment to craft and authenticity.
The Dundalk Distillery operated in Dundalk, County Louth, Ireland from 1708 to 1926 and is thought to have been one of the oldest registered distilleries in the country. At its height in the late 1800s, it produced hundreds of thousands of gallons of spirit each year, making it one of Ireland’s major whiskey sites. Its twin chimney stacks were so tall they became landmarks for sailors along the coast. Today, some of the original distillery buildings house the County Museum and Library.
In 2022, they opened one of Ireland’s only independent bonding, blending, and bottling facilities, run entirely on solar power. They have also pioneered eco-friendly packaging with bottles made from 80 percent recycled glass and natural corks. Their inventive side is clear in products like Dram in a Can, the world’s first canned Irish whiskey, which makes quality whiskey more portable and accessible.
Two Stacks is guided by three core principles: transparency, creativity, and innovation. These values are evident in their whiskey line-up, which has already earned awards and loyal fans. Their Single Grain Double Barrel took Best Single Grain (NAS) and Best Single Grain under 21 Years at the World Whiskies Awards and also won gold at the Ascot Awards.
This week’s selection showcases the variety and depth Two Stacks is known for, from their signature blend to a refined single grain, an indulgent cream liqueur, and a limited availability cask strength expression for those who want the whiskey in its purest form (as an optional add-on). We are unable to replenish the cask strength. So, once it’s gone, it’s gone!
The First Cut: Signature Blend (43% ABV)
Built from a five-part blend: Virgin Oak Grain, Ex-Bourbon Grain, Ex-Oloroso Pot Still, Ex-Bourbon Double Distilled Malt, and Ex-Bourbon Peated Malt. Each component brings its own layer of flavor, from the sweetness of grain whiskey to the depth of pot still spice and a subtle smoky touch from the peated malt.
Nose: Honey, vanilla, toasted oak, citrus, soft pastry, and light smoke
Palate: Caramel, citrus zest, dried fruit, gentle spice
Finish: Clean, light, slightly sweet
Double Barrel sINGLE gRAIN (43% ABV)
A combination of single casks aged in ex-bourbon for up to 4 years, then given a further 6+ months in Oloroso sherry casks. This all-maize mash bill with a touch of malt delivers an elegant and balanced single grain profile.
Nose: Light, floral, baked pear, almond, and orange peel
Palate: Delicate sweetness, rich vanilla, sherried dried fruits, gentle spice
Finish: Graceful and lingering
Double Irish Cream (17.5% ABV)
A game-changing cream liqueur made with four different styles of whiskey matured in bourbon, Oloroso, and virgin oak casks, plus double the usual buttercream content for extra richness. A subtle 2% peated malt adds a faint smokiness that enhances complexity without overpowering the palate.
Nose: Dairy cream, milk chocolate, vanilla, gentle whiskey warmth
Palate: Velvety cocoa, caramel, toffee, soft spice
Finish: Sweet, creamy, lingering whiskey notes
Add-On Pour: The Blender’s Cut Cask Strength (~64% ABV)
The same makeup as The First Cut, but bottled in its natural cask strength form: 40% Dark Grain aged in virgin oak, 40% Light Grain aged in bourbon, 8% Pot Still aged in Oloroso sherry butts, 10% Double Malt aged in bourbon, and 2% Peated Malt aged in bourbon. Non-chill filtered and uncut, it shows every detail of the blend’s character.
Nose: Rich caramel, dark fruit, oak spice
Palate: Burnt sugar, cake batter, espresso, layered spice
Finish: Long, warming, complex
