This week, we head to Dublin to explore the bold, modern spirit of Teeling Whiskey—a family legacy revived. Founded in 2012 by Jack and Stephen Teeling, the distillery brought whiskey-making back to the heart of Dublin for the first time in over 125 years. Known for innovation and non-traditional cask finishes, Teeling has quickly gained a global following for its layered, contemporary style that still honors the soul of Irish whiskey.

Teeling Small Batch – The Signature

A blend of grain and malt whiskey finished in Central American rum casks. Teeling’s signature pour—approachable but full of personality

ABV: 46% (non-chill filtered)
Cask: Ex-bourbon & rum casks

  • Nose: Dried fruit, vanilla, and spice

  • Taste: Smooth with sweet molasses, tropical fruit, and woody undertones

  • Finish: Lingering with warm spice and oak

Paired Bite: Candied Bacon – the sweet and smoky bite brings out the rum cask's molasses and deepens the spice.

Teeling Single Grain – The Silky One

Made entirely from corn and aged in Cabernet Sauvignon barrels. Light-bodied but full of flavor.

ABV: 46% (non-chill filtered)
Cask: 100% California red wine barrels

  • Nose: Red berries, vanilla, and light wood spice

  • Taste: Creamy and smooth with fruit compote, honey, and spice

Finish: Soft and elegant with lingering fruit

Paired Bite: Goat Cheese & Apricot Chimichurri Cracker – the creamy tang of goat cheese and bright apricot notes elevate the wine cask fruitiness.

Teeling Single Malt – The Complex One

A showcase of cask innovation and flavor layering. Rich, complex, and contemplative.

ABV: 46% (non-chill filtered)
Cask: Sherry, Port, Madeira, White Burgundy, and Cabernet Sauvignon

  • Nose: Ripe orchard fruit, citrus, and floral notes

  • Taste: Layered with dried fig, apricot, and baking spice

  • Finish: Long, warming, and fruit-forward

Paired Bite: Candied Walnuts – warm and toasty with gentle sweetness, they accent the dried fruit and spice beautifully.

Teeling Blackpitts – The Smoked One

One of the only peated whiskeys made in Dublin, aged in sweet wine casks. Bold but elegant.

ABV: 46% (non-chill filtered)
Cask: Ex-bourbon & Sauternes wine casks

  • Nose: BBQ smoke, honey, and stone fruit

  • Taste: Smoked pineapple, grilled peach, and spice

  • Finish: Balanced and smoky with a touch of sweetness
