This week’s flight takes a smoky turn as we explore the world of Peated Irish Whiskey, a style once common in rural Ireland and now seeing a bold revival. While peat has long been associated with Scotch, Ireland’s connection to smoky whiskey goes back centuries, when turf fires dried barley across the countryside. Today, a new generation of distillers is reimagining peat through distinctly Irish lenses: fruit-forward, spice-laced, and balanced, with smoke that lingers gently instead of overwhelming.
This flight highlights three expressions that show the breadth of peated Irish whiskey—from light and modern to traditional and bold.
West Cork Peat Charred Cask – The Gentle Smoke
A smooth entry point into Irish peat, light, approachable, and well-balanced.
ABV: 40%
Cask: First-fill bourbon, finished in peat-charred Irish oak
Nose: Soft smoke, vanilla, toasted oak, and honey
Taste: Sweet and mellow with gentle peat, malt, and orchard fruit
Finish: Light smoke lingers with a touch of caramel and spice
Muff Peated Irish Whiskey – The Rare Pot Still
One of the few peated pot still whiskeys in Ireland, rich, textured, and rare.
ABV: 43%
Cask: Bourbon & virgin oak
Nose: Earthy smoke, spice, and ripe grain
Taste: Creamy texture with cracked pepper, toasted oak, and soft smoke
Finish: Lingering warmth with hints of cereal and ash
Connemara Original – The Classic Revival
Ireland’s best-known peated whiskey, double-distilled and unmistakably Irish.
ABV: 40%
Cask: Bourbon
Nose: Floral smoke, green apple, and sweet malt
Taste: Bright fruit wrapped in campfire smoke, vanilla, and spice
Finish: Clean, dry, and smoky with a touch of honey
Suggested Enjoyment
Start with the whiskey, sip slowly and let the flavors unfold. Then try the paired bites to see how they interact with the smoke, sweetness, and spice in each pour. While food can enhance certain flavors, starting with it can sometimes overpower the whiskey’s more delicate notes. Let the peat act as a frame, not the focus, the deeper character lies in the fruit, grain, and cask beneath the smoke.
